Mango Chutney Recipe:


Ingredients:

4 ripe mangoes, peeled and diced

1 cup white sugar

1 cup vinegar

1 tablespoon grated ginger

1 teaspoon garlic paste

1 teaspoon red chili flakes

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1 cinnamon stick

Salt to taste

Instructions:

In a large saucepan, combine the diced mangoes, sugar, vinegar, ginger, garlic paste, red chili flakes, and salt. Mix well.

Place the saucepan on medium heat and bring the mixture to a boil, stirring occasionally.

Once it boils, reduce the heat to low and let it simmer for about 30-40 minutes until the mangoes are soft and the mixture thickens. Stir occasionally to prevent sticking.

In a separate small pan, heat some oil over medium heat. Add cumin seeds, mustard seeds, and cinnamon stick. Let them sizzle for a few seconds until fragrant.

Pour the tempering mixture into the mango chutney and stir well to combine.

Remove the saucepan from heat and let the chutney cool down to room temperature.

Once cooled, transfer the mango chutney into sterilized jars and store in the refrigerator.
