 12 large eggs, beaten

 1/2 teaspoon of kosher salt

 1/4 teaspoon of black pepper

 4 tablespoons (30 grams) of all-purpose flour, plus more if needed

 1/2 cup of vegetable oil, divided



Here's how you can create these delicious zucchini fritters:

1. Begin by placing the shredded zucchini in a large bowl. Add the finely crumbled feta cheese, minced dill, chopped mint, salt, and black pepper. Mix these ingredients together until well combined.

2. Incorporate one beaten egg into the mixture. Depending on the water content of your shredded zucchini, the egg might not fully coat the mixture. If necessary, add another beaten egg to achieve the desired consistency.

3. Add 4 tablespoons of all-purpose flour to the mixture. If the batter still has excess liquid and appears runny, gradually add more flour, one tablespoon at a time. The goal is to attain a consistency similar to that of pancake batter, with the strands of zucchini loosely coated.

4. Heat 1/4 cup of vegetable oil in a high walled skillet or Dutch oven over medium heat. You can test if the oil is ready by dropping a strand of zucchini into it. If the oil sizzles around the zucchini, it's at the right temperature.
