 Turkish Spiced Roast Turkey with Pomegranate Glaze


Ingredients:

- 1 whole turkey, weighing 12-14 pounds

- 4 tablespoons of Turkish baharat spice blend

- 2 tablespoons of olive oil

- Salt and pepper to taste

- 1 cup of pomegranate juice

- ¼ cup of honey

- 2 tablespoons of lemon juice

- 2 cloves of garlic, minced

- Fresh pomegranate arils for garnish

Instructions:

1. Preheat your oven to 325°F (163°C).

2. Rinse the turkey thoroughly and pat it dry with a paper towel.

3. In a small bowl, combine the Turkish baharat spice blend, olive oil, salt, and pepper. Mix well.

4. Rub the spice mixture all over the turkey, ensuring it's evenly coated.

5. Place the turkey on a roasting rack set in a large roasting pan.

- 1 cup of roasted, peeled chestnuts

- 1 cup of chopped dried apricots

- ½ cup of chopped parsley

- ½ cup of chopped mint

- 1 onion, finely chopped

- 4 tablespoons of butter

- Salt and pepper to taste

- Olive oil for basting
