Ingredients 

- 1 small turkey, weighing around 7-8 pounds

- 3 tablespoons of ground Aleppo Kebab spices

- 1 tablespoon of Turkish oregano

- 1½ tablespoons of salt

- ½ stick (4 tablespoons) of softened butter

how you can prepare it:

1. Combine the salt, Turkish oregano, and ground Aleppo Kebab spices in a mixing bowl.

2. Untie the turkey, remove the giblets, and give it a good rinse. Pat it dry with a paper towel, and then rub the spice mixture all over the turkey, both inside and out. Allow the turkey to brine, uncovered, in the refrigerator for 24 to 48 hours.

3. Preheat your oven to 325°F (163°C). Take the turkey out of the fridge and carefully rub it with the softened butter, making sure to cover the skin thoroughly. If desired, you can also stuff the turkey using your preferred stuffing recipe.

4. Place the turkey in the preheated oven and roast it until the internal temperature reaches 180°F (82°C). This should take approximately 2½ to 3 hours. Remember to check on the turkey regularly and baste it as needed during the cooking process.
